“Be My Valentine” Brunch Bellini

I got engaged two weeks ago, so it’s pretty safe to say I’m all about Valentine’s Day this year. But nothing great in this world truly exists without a brunch twist, right?

So grab the Champagne or Prosecco, and join us in adding a sexy dash of brunch this February 14 (or the Sunday before or after) because we’ve got the perfect drink for you! Our very own “Be My Valentine” Brunch Bellini—loaded up with one of our favorite aphrodisiacs, the strawberry.

Ingredients:

  • Champagne or Prosecco
  • 1 pint of Strawberries
  • 4 tbsp. of Simple Syrup

​​Directions:

  1. Pour simple syrup* and strawberries together in blender, leaving enough strawberries out for the garnish later—meaning two strawberries if you’re confident you won’t need a practice run.
  2. Blend until liquid!
  3. Pour bubbly into Champagne flute three-quarters of the way to the top (adapt to preference).
  4. Fill the rest of the flute with the strawberry-syrup blend.
  5. Stir! This is important if you don’t want your cocktail to look icky (we’re not kidding).
  6. Sculpt remaining strawberries into hearts by removing each stem, cutting a V into the top, and carefully slicing the bottom of the strawberry through the center so the strawberry can straddle the rim of your glass (it’s a a sexy drink; what did you expect?).
  7. Garnish, serve with chocolate (another favorite aphrodisiac), and enjoy!
  8. We made our own simple syrup by dissolving equal parts sugar and water by boiling until liquid.
